# Bagles

## Biga

1. Add (1 pinch)[instant yeast], (150g)[water], (225g)[bread flour]
2. Stir ingredients to combine
3. Cover
4. Ferment at room temperature for 12-24 hours.

## Bagel

1. Heat (380g)[water] to 86F.
2. Add water, biga, (3g)[instant yeast], (715g)[bread flour], (20g)[salt]
6. Mix
7. Knead for 12min or until the dough is able to pass the windowpane test
7. Cover and rest in bowl for 1 hour
8. Divide dough into twelve pieces
9. Roll and shape into bagels
10. Cover and place in refrigerator for 4-48 hours

## Cook
11. Preheat oven to 475F
12. Boil about a gallon of water and stir in (50g)[honey].
13. Add bagels 3-4
14. Boil for 30 seconds
15. Flip and boil another 30 seconds
16. Transfer to a wire rack on a sheet tray.
17. Bake for 12—15min

**NOTE:** I drop the malt powder and use honey for molasses. Mostly to not stock odd pantry items that only get used here.
