Baked Cod with Lemon and Olive Oil
Ingredients
- 4 codsfillets (6 ounces each), each 1" thick
- 1 ½ Tablespoonlemon juice
- 1 Tablespoonolive oil
- 2 garlicscloves, minced
- ½ teaspoondried thyme
- 1 pinchsalt
- ⅛ teaspoonground black pepper
- ¼ teaspoonsweet Hungarian paprika (optional)
Directions
- Preheat the oven to 400°F.
- Arrange the fillets in a 13" 3 9" baking dish.
- Drizzle with the lemon juice and oil, and sprinkle with the garlic, thyme, salt, and pepper.
- Sprinkle with the paprika (if using), and lightly rub it in.
- Bake until the flesh is completely opaque but still juicy, 15 to 20 minutes.
- Serve with the pan juices spooned over the top.
