| 288 g | bread flour |

Directions
Dough
- 1. Combine 240g water and 3g fresh yeast in a large bowl and stir to dissolve.
- 2. Add 288g bread flour and 6g salt.
- 3. Mix until just combined — no kneading needed.
- 4. Cover and let the dough rest for 30 minutes.
- 5. Perform the first set of stretch & folds (4 sides), then use the lift and slap technique.
- 6. Cover and rest for another 30 minutes.
- 7. Repeat the stretch & fold and lift and slap process once more.
- 8. Cover and let the dough rise until doubled in size, about 2 hours.
Shape
- 9. Divide dough into 8 equal parts.
- 10. Quickly shape each piece into a ball (preshaping).
- 11. Let rest uncovered for 10 minutes.
- 12. Perform the final shaping on each ball, folding to tighten the surface.
- 13. Place on a baking pan, cover, and let rise for 30 minutes.
Bake
- 14. Preheat oven to 430°F.
- 15. Just before baking, dust tops of rolls with bread flour and score them.
- 16. Add a little water around the bread in the pan for steam.
- 17. Cover with a second pan and bake for 20 minutes.
- 18. Remove the top pan and bake for 10 more minutes, or until golden brown and hollow when tapped.
- 19. Cool completely before serving.
