Ingredients
- 4 poundsboneless buffalo top-round roast
- 2 clovessgarlic, cut in quarters
- 1 tbspcoconut oil
- 1 tbspcoarse ground black pepper
- 2 tspskosher salt
- 5 slicessproscuitto or bacon
Directions
- Preheat oven to 350 degrees
- Cut 8 incisions about 2 inches deep
- Place garlic in pockets
- Coat roast with oil
- Coat with salt and pepper
- Drape with bacon
- Place in oven for roughly 1hour or until roast reaches 130+ degrees
- Let cool 15 minutes.
