Buffalo Roast

Ingredients

  • 4 poundsboneless buffalo top-round roast
  • 2 clovessgarlic, cut in quarters
  • 1 tbspcoconut oil
  • 1 tbspcoarse ground black pepper
  • 2 tspskosher salt
  • 5 slicessproscuitto or bacon

Directions

  1. Preheat oven to 350 degrees
  2. Cut 8 incisions about 2 inches deep
  3. Place garlic in pockets
  4. Coat roast with oil
  5. Coat with salt and pepper
  6. Drape with bacon
  7. Place in oven for roughly 1hour or until roast reaches 130+ degrees
  8. Let cool 15 minutes.
