Butterfly Chicken (spatchcock)

Ingredients

  • 3 ½ poundwhole chicken
  • olive oil
  • salt
  • pepper
  • 1 teaspoonrosemary
  • 1 teaspoongarlic

Directions

  1. Preheat skillet with oven to 500 degrees
  2. Cut spine from chicken
  3. Crack chest
  4. Tuck wings
  5. Season inside with salt & pepper
  6. Dry skin with paper towel (dry skin browns better)
  7. Coat skin lightly with olive oil
  8. Salt & pepper skin
  9. Take pan from oven
  10. Turn oven down to 450 deg
  11. Place chicken skin side down
  12. Place pan in oven
  13. Cook 30 min
  14. Combine garlic, rosemary 1 tablespoon of olive oil
  15. Flip chicken
  16. Coat with oil mixture
  17. Cook in oven ~10min (165 deg)
  18. Let rest ~10 min
