Butterfly Chicken (spatchcock)
Ingredients
- 3 ½ poundwhole chicken
- olive oil
- salt
- pepper
- 1 teaspoonrosemary
- 1 teaspoongarlic
Directions
- Preheat skillet with oven to 500 degrees
- Cut spine from chicken
- Crack chest
- Tuck wings
- Season inside with salt & pepper
- Dry skin with paper towel (dry skin browns better)
- Coat skin lightly with olive oil
- Salt & pepper skin
- Take pan from oven
- Turn oven down to 450 deg
- Place chicken skin side down
- Place pan in oven
- Cook 30 min
- Combine garlic, rosemary 1 tablespoon of olive oil
- Flip chicken
- Coat with oil mixture
- Cook in oven ~10min (165 deg)
- Let rest ~10 min
