# Easy Lentil Soup

## Grammelata

1. Combine [lemon zest], (4 cloves)[garlic], pressed, [parsley], [salt], and [olive oil].

## Soup

1. Small dice on (1)[carrot], (1 stalk)[celery], and (1 small)[onion].
2. Sweat in several tablespoons of olive oil and salt over mid-high heat.
3. Add 1/2 of grammelata.
4. Add (225g)[lentils].
5. Add (1)[yellow potato].
6. Add (960g)[broth].
7. Add (1-2)[bay leaves].
8. Cook until lentils are tender 20-45 min.
9. Pulse a bit with hand blender.
10. Finish with [lemon juice].

## Grammelata + Yogurt

1. Add (50 g)[skyr] to grammelata.
2. Combine.
