Ingredients
- 1 poundground pork
- 2 cupsthinly sliced cremini mushrooms
- 1 onionchopped finely in my mini-prep
- 1 inchknob of ginger grated on a microplane (I keep my ginger in the freezer)
- 3 garlicscloves squeezed through my garlic press
- 4 cupspre-washed baby spinach
- 1-2 Tablespoonfish sauce
- 1 Tablespoonwheat-free tamari
- 1-2 Tablespoonapple cider vinegar
- 1-2 Tablespooncoconut oil
- kosher salt
- pepper
Directions
- Heat coconut oil in my skillet over medium-high heat
- Add the onion and once they were translucent
- Throw in the mushrooms
- Once the vegetables cooked down, put in the ground pork, garlic, and ginger
- Add fish sauce, tamari, and vinegar
- Once the sauces were mixed in, I added the spinach and stirred until they wilted
- Add salt and pepper to taste
