Hobo stew

Ingredients

ground beef

kosher salt

yellow onion diced

garlics
clothes minced

tomato paste
carrots

pound
green beans

potatoes

cups
bone broth or chicken stock
5
ounces
fresh baby kale or frozen kale

Tablespoon
Sherry vinegar
¼
cup
minced fresh Italian parsley
Directions
Heat large pot over medium heat
Add beef and salt
Brown beef
Drain and transfer meet to a plate
Cook onions for 5-7min
Add garlic
Stir for 15 sec
Add tomato paste
Cook until pot develops coating
Add broth
Deglaze pot
Add beef, carrots, green beans and potatoes
Increase to high heat and boil
Lower heat to simmer
Cover
Cook for 20-30 minutes (or pressure cooker on high for 5 min)
Add kale
Stir until kale wilts
Add vinegar
Lasts 4 days in fridge or 2 months in freezer.
