Hobo stew

Ingredients

  • 2 poundsground beef
  • ½ teaspoonkosher salt
  • 1 smallyellow onion diced
  • 3 garlicsclothes minced
  • ¼ cuptomato paste
  • carrots
  • ½ poundgreen beans
  • 1 poundpotatoes
  • 4 cupsbone broth or chicken stock
  • 5 ouncesfresh baby kale or frozen kale
  • 1 TablespoonSherry vinegar
  • ¼ cupminced fresh Italian parsley

Directions

  1. Heat large pot over medium heat
  2. Add beef and salt
  3. Brown beef
  4. Drain and transfer meet to a plate
  5. Cook onions for 5-7min
  6. Add garlic
  7. Stir for 15 sec
  8. Add tomato paste
  9. Cook until pot develops coating
  10. Add broth
  11. Deglaze pot
  12. Add beef, carrots, green beans and potatoes
  13. Increase to high heat and boil
  14. Lower heat to simmer
  15. Cover
  16. Cook for 20-30 minutes (or pressure cooker on high for 5 min)
  17. Add kale
  18. Stir until kale wilts
  19. Add vinegar

Lasts 4 days in fridge or 2 months in freezer.
