# Hobo stew

1. Heat large pot over medium heat.
2. Add (900 g)[ground beef] and (3 g)[kosher salt].
3. Brown beef.
4. Drain and transfer meat to a plate.
5. Cook (1 small)[yellow onion] (diced) for 5-7 min.
6. Add (3)[garlic cloves] (minced).
7. Stir for 15 sec.
8. Add (60 g)[tomato paste].
9. Cook until pot develops coating.
10. Add (960 g)[bone broth].
11. Deglaze pot.
12. Add beef, (3)[carrots], (225 g)[green beans] and (454 g)[potatoes].
13. Increase to high heat and boil.
14. Lower heat to simmer.
15. Cover.
16. Cook for 20-30 minutes (or pressure cooker on high for 5 min).
17. Add (140 g)[fresh baby kale].
18. Stir until kale wilts.
19. Add (15 g)[Sherry vinegar] and (15 g)[minced fresh Italian parsley].

Lasts 4 days in fridge or 2 months in freezer.
