Mexican Rice

Mexican Rice

27 g olive oil
1 onion
1 jalapeno
3 pieces garlic
4 g smoked paprika
4 g sweet paprika
1 g oregano
6 g salt
2 roma tomatoes
2 c long grain rice
480 g water
  1. 1. Heat up a medium saucepan to medium heat.
  2. 2. Add 27g olive oil.
  3. 3. Add 1 onion (diced) and 1 jalapeno.
  4. 4. Sauté for 5-7 minutes.
  5. 5. Add 3pieces garlic and sauté for a couple of minutes.
  6. 6. Add 4g smoked paprika, 4g sweet paprika, 1g oregano, and 6g salt.
  7. 7. Give the pot a good stir.
  8. 8. Add 2 roma tomatoes and cook for a few minutes.
  9. 9. Add in 2cups long grain rice and give the pot a stir.
  10. 10. Add 480g water and stir.
  11. 11. Cook in pressure cooker for 4 min and natural release for at least 7 min.
