| 100 g | sake |
| 18 g | soy sauce |
| 24 g | olive oil |
| 60 g | brown sugar |
| 900 g | salmon steaks |

Directions
Marinate
- 1. Whisk together 90g miso, 100g sake, 18g soy sauce, 24g olive oil, and 60g brown sugar.
- 2. Rub mixture over every surface of 900g salmon steaks.
- 3. Transfer to a plastic zipper lock bag or sealable container.
- 4. Marinate for 30 minutes or up to two days.
Cook
- 5. Preheat a broiler to high.
- 6. Cover a small broiler pan with aluminum foil.
- 7. Place salmon on broiler pan.
- 8. Broil untill top is charred, about 5 minutes.
Pairs well with Shiitake Mushrooms and Broccoli
