Noodles and Broccolini

225 g whole wheat noodles
1 tbsp olive oil
400 g broccolini
100 g snap peas
1 pinch salt
450 g ground beef
1 tbsp oil
145 g chili crisps
50 g soy sauce
50 g water
60 g peanut butter

Noodles

  1. 1. Cook 225g whole wheat noodles per package.
  2. 2. Drain and rinse with cold water.
  3. 3. Toss with olive oil to keep from sticking.

Broccolini

  1. 4. Cut 400g broccolini
  2. 5. Combine broccolini and 100g snap peas in 1tbsp olive oil and 1pinch salt
  3. 6. Stir-fry 90-120 seconds over high.
  4. 7. Transfer to bowl.

Combine

  1. 8. Brown 450g ground beef in 1tbsp oil over high heat for 5–6 min until crumbled and brown.
  2. 9. Add 145g chili crisps
  3. 10. Stir and scrape 1 min.
  4. 11. Add 50g soy sauce, 50g water, 60g peanut butter.
  5. 12. Stir and bring to simmer.
  6. 13. Add noodles, broccolini, and snap peas.
  7. 14. Toss well.

NOTE: Based on Brian Lagerstrom's Chili Crips Peanut Noodles with Broccolini my changes were to try and bring down sugar and increase protein.
