Ollies's Cracklin' Chicken

1800 g bone-in skin-on chicken thighs
15 g Diamond Crystal kosher salt
2 tsp seasoning blend of choice
9 g ghee
  1. 1. Cut bones out of 1800g bone-in skin-on chicken thighs.
  2. 2. Smash meat flat.
  3. 3. Salt skin side with 15g Diamond Crystal kosher salt.
  4. 4. Salt or season with 2tsp seasoning blend of choice.
  5. 5. Heat 9g ghee in pan over medium high.
  6. 6. Brown skin side of meat.
  7. 7. Flip chicken and cook for 3 min.
  8. 8. Remove from heat.
  9. 9. Let rest ~5 min.
  10. 10. Slice.
