Ollies's Cracklin' Chicken
Ingredients
- 4 poundsbone-in, skin-on chicken thighs
- 1 TablespoonDiamond Crystal kosher salt
- 2 teaspoonsghee
- 2 teaspoonsseasoning blend of choice (optional)
Directions
- cut bones out
- smash meat flat
- salt skin side
- salt or season
- heat ghee in pan over medium high
- brown skin side of meat
- flip chicken and cook for 3 min
- remove from heat
- let rest ~5min
- slice
