Ollies's Cracklin' Chicken

Ingredients

  • 4 poundsbone-in, skin-on chicken thighs
  • 1 TablespoonDiamond Crystal kosher salt
  • 2 teaspoonsghee
  • 2 teaspoonsseasoning blend of choice (optional)

Directions

  1. cut bones out
  2. smash meat flat
  3. salt skin side
  4. salt or season
  5. heat ghee in pan over medium high
  6. brown skin side of meat
  7. flip chicken and cook for 3 min
  8. remove from heat
  9. let rest ~5min
  10. slice
