| 1800 g | bone-in skin-on chicken thighs |
| 15 g | Diamond Crystal kosher salt |
| 2 tsp | seasoning blend of choice |
| 9 g | ghee |

Directions
- 1. Cut bones out of 1800g bone-in skin-on chicken thighs.
- 2. Smash meat flat.
- 3. Salt skin side with 15g Diamond Crystal kosher salt.
- 4. Salt or season with 2tsp seasoning blend of choice.
- 5. Heat 9g ghee in pan over medium high.
- 6. Brown skin side of meat.
- 7. Flip chicken and cook for 3 min.
- 8. Remove from heat.
- 9. Let rest ~5 min.
- 10. Slice.
