Cut bones out of (1800 g)[bone-in skin-on chicken thighs]. 2. Smash meat flat. 3. Salt skin side with (15 g)[Diamond Crystal kosher salt]. 4. Salt or season with (2 tsp)[seasoning blend of choice]. 5. Heat (9 g)[ghee] in pan over medium high. 6. Brown skin side of meat. 7. Flip chicken and cook for 3 min. 8. Remove from heat. 9.
