# Poached Eggs

1. Mix (150 g)[water] and (150 g)[white distilled vinegar] in a bowl. Add (1-6 large)[eggs] and let sit for 10 minutes.
2. Heat 2 quarts of water to 195°F/90C. Add (20 g)[salt].
3. Use a ladle to transfer eggs from vinegar mix to water.
4. Poach for 4 to 4.5 minutes. Remove and pat dry.
