120 g soy sauce
60 g lemon juice
60 g orange juice
60 g rice vinegar
30 g mirin
1 2x3 piece konbu
  1. 1. Combine 120g soy sauce, 60g lemon juice, 60g orange juice, 60g rice vinegar, 30g mirin, and 1 2x3 piece konbu
  2. 2. Bring to simmer
  3. 3. Turn off heat and cover for 30 min
  4. 4. Remove konbu
  5. 5. Strain
  6. 6. Chill in fridge
