Ingredients
- 1 poundfingerling or Yukon Gold potatoes, cut into uniform 1—1½ inch cubes
- 2 Tablespoonsghee, avocado oil, or favorite cooking fat
- Kosher salt
- Freshly ground black pepper
- ¼ cupminced chives or Italian parsley (optional)
- juice of lemon (optional)
- 1 cupwater
Directions
- add potatoes and water to pressure cooker
- 5min on high
- natural release 10min
- fry in cast iron till brown
- season with salt and pepper
- toss in lemon and chives
