Pressure Cooker Potatoes

Ingredients

  • 1 poundfingerling or Yukon Gold potatoes, cut into uniform 1—1½ inch cubes
  • 2 Tablespoonsghee, avocado oil, or favorite cooking fat
  • Kosher salt
  • Freshly ground black pepper
  • ¼ cupminced chives or Italian parsley (optional)
  • juice of lemon (optional)
  • 1 cupwater

Directions

  1. add potatoes and water to pressure cooker
  2. 5min on high
  3. natural release 10min
  4. fry in cast iron till brown
  5. season with salt and pepper
  6. toss in lemon and chives
