# SAUTÉED MUSHROOMS

1. Heat large saute over med-high
2. Add (45 g)[olive oil], (225 g)[cremini, ½" slices], (225 g)[oyster, 1" chunks], and (5 g)[salt]
3. Cook 7–8 min, stirring often, til brown
4. Add (75 g)[shallot, chopped] & (15 g)[garlic, minced]
5. Cook 1 min
6. Add splash [water] to deglaze,
7. Then (1 g)[thyme] & (30 g)[butter] & saute 2 more min.
8. Add (10 g)[aged balsamic].
9. Taste for seasoning.
