# Skillet Turkey Burgers

1. Melt (14g)[unsalted butter] with (12g)[vegetable oil] in a small bowl
2. Place (1 lb)[ground turkey] in large bowl
3. Using your hands, break up meat into rough ½-inch pieces
4. Combine (5g)[water] and (2g)[baking soda] in small bowl
5. Drizzle baking soda mixture evenly over turkey, followed by (15g)[soy sauce] and melted butter
6. Evenly sprinkle (12g)[panko bread crumbs], (10g)[grated Parmesan cheese], (1g)[unflavored gelatin], (1g)[pepper], and (1g)[table salt] over turkey mixture
7. Combine
8. Divide meat into 113 g lightly packed portions
9. Heat skillet over medium heat
10. Transfer patty to skillet and smash down
11. When patties start to sizzle, cover skillet and cook until patties are well-browned on bottom, about 2½ minutes (if patties are not browned after 2½ minutes, increase heat)
12. Carefully flip patties, cover, and continue to cook until second side is well browned and burgers register 160 degrees, 2½ to 3 minutes longer
13. If using cheese, place 1 slice of [American cheese] on each burger about 1 minute before burgers finish cooking
14. Transfer burgers to plate and let rest for 5 minutes, then transfer to (4)[hamburger buns] and serve
