Skipper's Canteen Carrot Ginger Lost and Found Soup

2 lb carrots
1 c yellow onions
3 tbsp grated ginger
480 g vegetable broth
7 g honey
2 g coriander powder
2 g ground cumin
1 g ground turmeric
2 g paprika
5 g salt
everything **except** (240g coconut milk
crushed peanuts
  1. 1. Place 2lb carrots, 1cup yellow onions, 3tbsp grated ginger, 480g vegetable broth, 7g honey, 2g coriander powder, 2g ground cumin, 1g ground turmeric, 2g paprika, and 5g salt in the instant pot everything **except** (240g coconut milk).
  2. 2. Stir
  3. 3. Pressure cook on high pressure for 10 minutes.
  4. 4. When the instant pot beeps, let the pressure release naturally.
  5. 5. Open the pot and blend the soup smooth using an immersion blender or regular blender.
  6. 6. Stir in coconut milk.
  7. 7. Top with crushed peanuts and serve.
