Spinach, Cheese, and Bread Stuffing

Ingredients

  • 1 Tablespoonolive oil
  • 1 teaspoonfinely chopped garlic
  • 5 ouncesbaby spinach leaves
  • ¼ teaspoonsalt
  • ¼ teaspoonfreshly ground black pepper
  • 1 cupgrated Gruyère or mozzarella cheese (about 4 ounces)
  • 1 ½ cupcubed (½ inch) bread

Directions

  1. Heat the oil in a large saucepan or skillet.
  2. Add the garlic, spinach, salt, and pepper and
  3. cook for 1 minute to soften the garlic and wilt the spinach.
  4. Transfer to a bowl and let cool to room temperature.
