# Turkey Gravey

1. Make a roux with (75g)[rendered turkey fat] (or butter) and (40g)[all-purpose flour] on stove.
2. Slowly add (1 quart)[turkey stock] (or chicken stock) and (1 bunch)[fresh sage] (optional).
3. Season to taste with [kosher salt] and [freshly ground black pepper].
