Ultimate Paleo Chili

Ingredients

  • 2 poundslean ground beef (good) or grass-fed ground beef (best)
  • 2 mediumsonions, chopped
  • 1 largegreen bell pepper, chopped
  • 1 largeyellow bell pepper, chopped
  • 3-5 clovesgarlic, minced
  • 28 ouncestomato pureé
  • 14 ouncestomato sauce
  • 1 ½ cupcoffee (substitute with broth if you prefer)
  • 3 Tablespoonschili powder
  • 2 Tablespoonscumin
  • 1 Tablespoonoregano
  • 1 tspgarlic powder
  • 1 tsponion powder
  • 2 tspspumpkin pie seasoning (substitute with 1tsp cinnamon + 1tsp nutmeg)
  • ½ tspcayenne (optional)
  • 1 tspsea salt + sprinkle
  • 1 tsppepper + sprinkle
  • 1 Tablespooncoconut oil

Directions

  1. Sauté onions and bell peppers in coconut oil over med-high heat in a large soup pot.
  2. Sprinkle with salt and pepper.
  3. Cook 5 minutes.
  4. Add beef and garlic and cook until brown. About 7 minutes
  5. Add tomato pureé, tomato sauce, coffee and spices.
  6. Bring to a boil
  7. then reduce heat and simmer 1-2 hour
