West Lake Soup

Ingredients

  • ½ poundflank steak finely minced
  • 1 teaspoonkosher salt
  • 2 teaspoonsrice wine vinegar
  • 1 teaspoonfish sauce
  • 1 teaspoonsesame oil
  • ground white pepper
  • 6 cupsbone broth or chicken stock
  • ¼ poundfresh shiitake mushrooms
  • ¼ cuparrowroot power mix with equal part water
  • 3 largesegg whites
  • 1 cup(packed) fresh cilantro, minced
  • sliced scallions

Directions

  1. Combine beef, salt, vinegar, fish sauce, sesame oil, and ¼ teaspoon white pepper in a bowl
  2. Bring broth and mushrooms to a boil over high heat.
  3. Lower heat to maintain a simmer
  4. Add arrowroot slurry
  5. Let soup thicken
  6. Add meat
  7. Cook meat through ( ~30 seconds)
  8. Turn off heat
  9. Season with salt and white pepper
  10. Pour in egg whites while stirring
  11. Add cilantro and scallions
