Ingredients
| 1/2 lb | flank steak |
| 1 tsp | salt |
| 2 tsp | vinegar |
| 1 tsp | fish sauce |
| 1 tsp | sesame oil |
| 1/4 tsp | white pepper |
| 6 c | bone broth |
| 1/4 lb | shiitake mushrooms |
| 1/4 c | arrowroot powder |
| 1/4 c | water |
| ground white pepper | |
| 3 | egg whites |
| cilantro | |

Directions
- 1. Mince 1/2 lb flank steak.
- 2. Combine beef, 1tsp salt, 2tsp vinegar, 1tsp fish sauce, 1ts sesame oil, and 1/4 tsp white pepper in a bowl.
- 3. Bring 6cups bone broth and 1/4 lb shiitake mushrooms to a boil over high heat.
- 4. Lower heat to maintain a simmer.
- 5. Mix 1/4 c arrowroot powder with 1/4 c water to make a slurry.
- 6. Add arrowroot slurry to pot.
- 7. Let soup thicken.
- 8. Add meat to soup.
- 9. Cook meat through, ~30 seconds.
- 10. Turn off heat.
- 11. Season with salt and ground white pepper.
- 12. Pour in 3 egg whites while stirring.
- 13. Garnish with cilantro and scallions.
Notes
Flank steak can be subbed with ground beef.
