Ingredients
- ½ poundflank steak finely minced
- 1 teaspoonkosher salt
- 2 teaspoonsrice wine vinegar
- 1 teaspoonfish sauce
- 1 teaspoonsesame oil
- ground white pepper
- 6 cupsbone broth or chicken stock
- ¼ poundfresh shiitake mushrooms
- ¼ cuparrowroot power mix with equal part water
- 3 largesegg whites
- 1 cup(packed) fresh cilantro, minced
- sliced scallions
Directions
- Combine beef, salt, vinegar, fish sauce, sesame oil, and ¼ teaspoon white pepper in a bowl
- Bring broth and mushrooms to a boil over high heat.
- Lower heat to maintain a simmer
- Add arrowroot slurry
- Let soup thicken
- Add meat
- Cook meat through ( ~30 seconds)
- Turn off heat
- Season with salt and white pepper
- Pour in egg whites while stirring
- Add cilantro and scallions
