Mince (1/2 lb)[flank steak]. 2. Combine beef, (1 tsp)[salt], (2 tsp)[vinegar], (1 tsp)[fish sauce], (1 ts)[sesame oil], and (1/4 tsp)[white pepper] in a bowl. 3. Bring (6 cups)[bone broth] and (1/4 lb)[shiitake mushrooms] to a boil over high heat. 4. Lower heat to maintain a simmer. 5. Mix (1/4 c)[arrowroot powder] with (1/4 c)[water] to make a slurry. 6. Add arrowroot slurry to pot. 7. Let soup thicken. 8. Add meat to soup. 9. Cook meat through, ~30 seconds. 10. Turn off heat. 11. Season with [salt] and [ground white pepper]. 12. Pour in (3)[egg whites] while stirring. 13. Garnish with [cilantro] and [scallions]. ## Notes Flank steak can be subbed with ground beef.
