Directions
Chicken
- 1. Slice 1000g skinless boneless chicken breast into fine pieces about a cm/an inch thick, then cut these pieces into smaller bite-sized pieces.
- 2. Season the chicken with 8g garlic powder, 8g onion powder, 6g paprika, 8g salt, freshly ground pepper, and 10g oil.
- 3. Cook the chicken pieces in a pan over medium-high heat for 1 minute on each side to add color. Do not fully cook.
Sauce
- 4. Blend 200g 1% fat cottage cheese, 25g Sriracha, and 25g honey until smooth.
- 5. Coat the chicken pieces lightly with the sauce.
Wrap
- 6. Place a tortilla (18 cm / 7 inches in diameter, or regular wheat tortillas) on a surface, spread 10g of 160g shredded cheese on it (low-fat options like mozzarella recommended), and add the chicken. Roll tightly into a round shape.
- 7. Repeat with remaining tortillas and filling.
- 8. Place the roll-ups on a baking sheet and bake in a preheated oven at 200°C (400°F) for 6-7 minutes until the tops are crispy.
Can freeze after cooking for ~3 months.
