Easy Lentil Soup

lemon zest
4 cloves garlic
parsley
salt
olive oil
1 carrot
1 stalk celery
1 small onion
225 g lentils
1 yellow potato
960 g broth
1-2 bay leaves
lemon juice
50 g skyr

Grammelata

  1. 1. Combine lemon zest, 4cloves garlic, pressed, parsley, salt, and olive oil.

Soup

  1. 2. Small dice on 1 carrot, 1stalk celery, and 1small onion.
  2. 3. Sweat in several tablespoons of olive oil and salt over mid-high heat.
  3. 4. Add 1/2 of grammelata.
  4. 5. Add 225g lentils.
  5. 6. Add 1 yellow potato.
  6. 7. Add 960g broth.
  7. 8. Add 1-2 bay leaves.
  8. 9. Cook until lentils are tender 20-45 min.
  9. 10. Pulse a bit with hand blender.
  10. 11. Finish with lemon juice.

Grammelata + Yogurt

  1. 12. Add 50g skyr to grammelata.
  2. 13. Combine.
