Grammelata
- 1. Combine lemon zest, 4cloves garlic, pressed, parsley, salt, and olive oil.
Soup
- 2. Small dice on 1 carrot, 1stalk celery, and 1small onion.
- 3. Sweat in several tablespoons of olive oil and salt over mid-high heat.
- 4. Add 1/2 of grammelata.
- 5. Add 225g lentils.
- 6. Add 1 yellow potato.
- 7. Add 960g broth.
- 8. Add 1-2 bay leaves.
- 9. Cook until lentils are tender 20-45 min.
- 10. Pulse a bit with hand blender.
- 11. Finish with lemon juice.
Grammelata + Yogurt
- 12. Add 50g skyr to grammelata.
- 13. Combine.
