| 250 g | shallots |
| 200 g | ap flour |
| 75 g | corn starch |
| 3 g | salt |
| 3 g | baking powder |
| 2 g | black pepper |
| 2 g | paprika |
| 225 g | buttermilk |

Directions
- 1. Add 1 inch of canola oil to large pot, heat over med-high to 350F.
- 2. Slice 250g shallots into rings.
- 3. Combine 200g ap flour, 75g corn starch, 3g salt, 3g baking powder, 2g black pepper, & 2g paprika.
- 4. Toss shallots to coat.
- 5. Sift shallots out of flour and place in a bowl.
- 6. Add 225g buttermilk to shallots and stir to combine
- 7. Add shallots back into flour mixture & toss to coat.
- 8. Lower shallots into 350F oil.
- 9. After 5 mins or when shallots are golden & crispy, transfer to towel.
