Fried Shallots

canola oil
200 g ap flour
75 g corn starch
3 g salt
3 g baking powder
2 g black pepper
2 g paprika
250 g shallots
225 g buttermilk
  1. 1. Add 1” of canola oil to large pot, heat over med-high to 350F/175C.
  2. 2. Combine 200g ap flour, 75g corn starch, 3g salt, 3g baking powder, 2g black pepper, & 2g paprika.
  3. 3. Add 250g shallots (sliced into rings and separated) and toss to coat.
  4. 4. Sift shallots out of flour and place in a bowl.
  5. 5. Add 225g buttermilk to shallots and stir to combine, then add shallots back into flour mixture & toss to coat.
  6. 6. Lower shallots into 350F/175C oil.
  7. 7. After 5 mins or when shallots are golden & crispy, transfer to towel.
