Directions
- 1. Crack 1whole egg into a bowl and add the 50g liquid egg whites.
- 2. Add a pinch of salt and black pepper, then mix with a fork.
- 3. Add the 20g shredded mozzarella cheese to the egg mixture and set aside.
- 4. Prepare the sauce: In a bowl, combine ½ avocado, 30g low-fat cream cheese, salt, pepper, and a little lime juice.
- 5. Mash and mix until smooth.
- 6. Cook 100g turkey breast (sliced) in a non-stick pan until browned.
- 7. Add 1 pickled jalapeño slices and continue cooking briefly.
- 8. Add the egg and cheese mixture to the pan, stirring continuously until the eggs are cooked but still soft.
- 9. Spread the avocado cream cheese mixture on the 1 tortilla.
- 10. Add the cooked egg, cheese, turkey, and jalapeño mixture on top.
- 11. Fold the sides of the tortilla and roll it into a burrito shape.
- 12. Place the burrito seam-side down in a hot pan and cook each side for about 10-15 seconds until crispy and browned.
