Paper-Wrapped Chicken

Ingredients

  • ½ cupStir-Fry Sauce
  • 4 cupssliced bok choy
  • Diamond Crystal brand kosher salt
  • Freshly ground black pepper
  • boneless, skinless chicken thighs
  • 8 shiitakesmushrooms, thinly sliced
  • large shallots, thinly sliced

Directions

  1. Preheat oven to 450 degrees
  2. Fold and cut heart shaped paper
  3. on have the paper place Bok Choy, salt and pepper
  4. place chicken on top
  5. add mushrooms and shallots on top
  6. add 2 tablespoons of stir-fry sauce
  7. Fold and crimp paper
  8. place parchment packets on a rimmed backing sheet
  9. place in oven
  10. cook for 15-20 min or until chicken reads at 165deg

For pressure cooker method skip the paper

  • Combine ingredients in pressure cooker
  • Cook on high pressure for 4 min
