| Diamond Crystal brand kosher salt | |
| freshly ground black pepper | |
| 4 | boneless, skinless chicken thighs |
| 8 shiitake | mushrooms, thinly sliced |
| 2 large | shallots, thinly sliced |
| 1/2 c | stir-fry sauce |

Directions
- 1. Preheat oven to 450 degrees
- 2. Fold and cut heart shaped paper
- 3. On half of the paper place 4c sliced bok choy, Diamond Crystal brand kosher salt, and freshly ground black pepper
- 4. Place 4 boneless, skinless chicken thighs on top
- 5. Add 8shiitake mushrooms, thinly sliced and 2large shallots, thinly sliced on top
- 6. Add 2 tablespoons of 1/2 c stir-fry sauce
- 7. Fold and crimp paper
- 8. Place parchment packets on a rimmed baking sheet
- 9. Place in oven
- 10. Cook for 15-20 min or until chicken reads at 165deg
For pressure cooker method skip the paper
- Combine ingredients in pressure cooker
- Cook on high pressure for 4 min
