4 c sliced bok choy
Diamond Crystal brand kosher salt
freshly ground black pepper
4 boneless, skinless chicken thighs
8 shiitake mushrooms, thinly sliced
2 large shallots, thinly sliced
1/2 c stir-fry sauce
  1. 1. Preheat oven to 450 degrees
  2. 2. Fold and cut heart shaped paper
  3. 3. On half of the paper place 4c sliced bok choy, Diamond Crystal brand kosher salt, and freshly ground black pepper
  4. 4. Place 4 boneless, skinless chicken thighs on top
  5. 5. Add 8shiitake mushrooms, thinly sliced and 2large shallots, thinly sliced on top
  6. 6. Add 2 tablespoons of 1/2 c stir-fry sauce
  7. 7. Fold and crimp paper
  8. 8. Place parchment packets on a rimmed baking sheet
  9. 9. Place in oven
  10. 10. Cook for 15-20 min or until chicken reads at 165deg

For pressure cooker method skip the paper

- Combine ingredients in pressure cooker

- Cook on high pressure for 4 min
