Poached Eggs

150 g water
150 g white distilled vinegar
1-6large eggs
20 g salt
  1. 1. Mix 150g water and 150g white distilled vinegar in a bowl. Add 1-6 large eggs and let sit for 10 minutes.
  2. 2. Heat 2 quarts of water to 195°F/90C. Add 20g salt.
  3. 3. Use a ladle to transfer eggs from vinegar mix to water.
  4. 4. Poach for 4 to 4.5 minutes. Remove and pat dry.
