Ingredients

  • 15 poundsturkey
  • ¼ cupkosher salt
  • 2 Tablespoonsdark brown sugar
  • 1 Tablespoonfreshly ground black pepper
  • 1 Tablespoongranulated garlic
  • Cooking oil of preference, for drizzling

Directions

  1. Break down bird
  2. Dry the skin
  3. Mix rub
  4. Rub rub on turkey
  5. Refrigerate, uncovered, for at least 2 hours, or overnight.
  6. Two hours before you are ready to serve the turkey, preheat the oven to 425°F (220˚C).
  7. Remove the turkey parts from the fridge and drizzle with oil before placing in the hot oven.
  8. Roast for 30 minutes
  9. Rotate
  10. Reduce the oven temperature to 400˚F
  11. Continue until breast is 160 and thigh is 170
