| 225 g | cremini, ½" slices |
| 225 g | oyster, 1" chunks |
| 5 g | salt |
| 75 g | shallot, chopped |
| 15 g | garlic, minced |

| 1 g | thyme |
| 30 g | butter |
| 10 g | aged balsamic |

Directions
- 1. Heat large saute over med-high
- 2. Add 45g olive oil, 225g cremini, ½" slices, 225g oyster, 1" chunks, and 5g salt
- 3. Cook 7–8 min, stirring often, til brown
- 4. Add 75g shallot, chopped & 15g garlic, minced
- 5. Cook 1 min
- 6. Add splash water to deglaze,
- 7. Then 1g thyme & 30g butter & saute 2 more min.
- 8. Add 10g aged balsamic.
- 9. Taste for seasoning.
