45 g olive oil
225 g cremini, ½" slices
225 g oyster, 1" chunks
5 g salt
75 g shallot, chopped
15 g garlic, minced
water
1 g thyme
30 g butter
10 g aged balsamic
  1. 1. Heat large saute over med-high
  2. 2. Add 45g olive oil, 225g cremini, ½" slices, 225g oyster, 1" chunks, and 5g salt
  3. 3. Cook 7–8 min, stirring often, til brown
  4. 4. Add 75g shallot, chopped & 15g garlic, minced
  5. 5. Cook 1 min
  6. 6. Add splash water to deglaze,
  7. 7. Then 1g thyme & 30g butter & saute 2 more min.
  8. 8. Add 10g aged balsamic.
  9. 9. Taste for seasoning.
