Directions
- 1. Melt 14g unsalted butter with 12g vegetable oil in a small bowl
- 2. Place 1lb ground turkey in large bowl
- 3. Using your hands, break up meat into rough 1/2-inch pieces
- 4. Combine 5g water and 2g baking soda in small bowl
- 5. Drizzle baking soda mixture evenly over turkey
- 6. Followed by 15g soy sauce and melted butter
- 7. Evenly sprinkle 12g panko bread crumbs, 10g grated Parmesan cheese, 1g unflavored gelatin, 1g pepper, and 1g table salt over turkey mixture
- 8. Combine
- 9. Divide meat into 113 g lightly packed portions
- 10. Heat skillet over medium heat
- 11. Transfer patty to skillet and smash down
- 12. When patties start to sizzle, cover skillet and cook until patties are well-browned on bottom, about 2 1/2 minutes (if patties are not browned after 2 1/2 minutes, increase heat)
- 13. Carefully flip patties, cover, and continue to cook until second side is well browned and burgers register 160 degrees, 2 1/2 to 3 minutes longer
- 14. If using cheese, place 1 slice of American cheese on each burger about 1 minute before burgers finish cooking
- 15. Transfer burgers to plate and let rest for 5 minutes, then transfer to 4 hamburger buns and serve
