Spicy Chilled Korean Noodles (Bibim Guksu-Style)

1 block instant ramen
20 g gochujang
15 g soy sauce
5 g sesame oil
5 g rice vinegar
10 g honey
10 g kimchi juice
5 g gochugaru
50 g well-fermented kimchi
40 g julienned cucumber
15 g scallions
crispy seaweed strips
untoasted sesame seeds
  1. 1. Boil 1block instant ramen (seasoning discarded) 4–5 min until tender. Drain, rinse under cold water, then blot on paper towel until the strands look matte.
  2. 2. Whisk 20g gochujang, 15g soy sauce, 5g sesame oil, 5g rice vinegar, 10g honey, 10g kimchi juice & 5g gochugaru until smooth.
  3. 3. Fold 50g well-fermented kimchi (julienned) and chilled noodles into sauce until every strand is coated.
  4. 4. Mound into a bowl; pile on 40g julienned cucumber and 15g scallions (paper-thin bias slices), then finish with crispy seaweed strips and untoasted sesame seeds. Eat cold—explosive flavor, minimal effort.
