Spicy Chilled Korean Noodles (Bibim Guksu-Style)

| 1 block | instant ramen |
| 20 g | gochujang |
| 15 g | soy sauce |
| 5 g | sesame oil |
| 5 g | rice vinegar |
| 10 g | honey |
| 10 g | kimchi juice |
| 5 g | gochugaru |
| 50 g | well-fermented kimchi |
| 40 g | julienned cucumber |
| 15 g | scallions |
| crispy seaweed strips | |

Directions
- 1. Boil 1block instant ramen (seasoning discarded) 4–5 min until tender. Drain, rinse under cold water, then blot on paper towel until the strands look matte.
- 2. Whisk 20g gochujang, 15g soy sauce, 5g sesame oil, 5g rice vinegar, 10g honey, 10g kimchi juice & 5g gochugaru until smooth.
- 3. Fold 50g well-fermented kimchi (julienned) and chilled noodles into sauce until every strand is coated.
- 4. Mound into a bowl; pile on 40g julienned cucumber and 15g scallions (paper-thin bias slices), then finish with crispy seaweed strips and untoasted sesame seeds. Eat cold—explosive flavor, minimal effort.
