Tomato Sauce

3 ripe tomatoes
olive oil
60 g onion
1 clove garlic
fresh thyme
salt
sugar
pepper
butter
  1. 1. Remove stems from 3ripe tomatoes.
  2. 2. Boil water enough to cover whole tomatoes.
  3. 3. Blanch tomatoes in water 10-15 seconds.
  4. 4. Remove.
  5. 5. Peel skins from tomatoes.
  6. 6. Press the seeds and juice out.
  7. 7. Heat olive oil in pan.
  8. 8. Add 60g onion.
  9. 9. Add 1clove garlic (chopped).
  10. 10. Add fresh thyme.
  11. 11. Chop tomato.
  12. 12. Add tomato juice (NOT seeds).
  13. 13. Add tomato.
  14. 14. Add salt, sugar, pepper.
  15. 15. Boil 3-4 min.
  16. 16. Add butter.
