75 g rendered turkey fat
40 g all-purpose flour
1 quart turkey stock
1 bunch fresh sage
kosher salt
freshly ground black pepper
  1. 1. Make a roux with 75g rendered turkey fat (or butter) and 40g all-purpose flour on stove.
  2. 2. Slowly add 1quart turkey stock (or chicken stock) and 1bunch fresh sage (optional).
  3. 3. Season to taste with kosher salt and freshly ground black pepper.
