| 275 g | onion |
| 3-4 | poblano peppers |
| 700 g | tomatillos |
| 25 g | garlic |
| 25 g | cilantro |

Directions
- 1. Preheat your broiler or oven to its highest setting.
- 2. Chop 275g onion.
- 3. De-stemm and halve 3-4 poblano peppers
- 4. Place the chopped onion, 700g tomatillos, poblanos, and 25g garlic on a parchment-lined baking sheet.
- 5. Broil on high about 15 minutes until the vegetables have charred and caramelized.
- 6. Transfer the charred vegetables to a blender and blend on high for about 1 minute until smooth
- 7. Add 25g cilantro to the blender and blend until broken down.
